As a high schooler Jenkins competed in and won her first Am World Championship in 2001. She was in the U16 division. She won another Am title (doubles) in 2002. She decided to stay an amateur in hopes of winning the World title. While away from high school to win the amateur division of the Women's Nationals, she was crowned Homecoming queen. During her senior year of high school she qualified for the state meet in the discus and shot. Despite being offered several collegiate scholarships for her work on the track, she decided to pursue her disc golf career.

She went pro in 2004 and took home the Rookie of the Year award. She had her first professional win that year when she won the Hawaii State Championships. In 2005, she took a break from the tour to attend Kent State University. She spent one school year at KSU. She returned to touring for the '05, '06 and '07 summers. Her decision to retrun paid off, as she won the 2006 and later the 2008 Japan Open. She traveled the world with Team USA the following years.

She reached her goal of being World Champion in 2007. She went back to successfully defend her title in 2008 and 2009. In 2008, she returned to school, this time online with the University of Phoenix to achieve her BA in Business. She continued her success throughout the years winning the European Tour twice and  the Scandinavian Open in 2008.
